What Grains and for How Long They Need to Be Soaked and how soaking Grains affects our health and what happens if You do not soak them before cooking. Soaking time depending on the type of Grain.
Recently, there has been more and more talk about the fact that grains and Groats may not be part of a healthy diet, but the cause of many chronic diseases of the 21st century.
And by brewing yourself quick-cooking oatmeal in the morning for breakfast, You do not nourish your body with fiber and vitamins, but on the contrary take the necessary minerals out of the body, overload your digestive tract and over time, if you suffer from sensitivity to antinutrients — you will bring yourself to autoimmune, hormonal, cardiovascular and other serious diseases.
This causes a lot of controversy among people who claim that bread and Grains are the staff of life.
But if you look into it, our ancestors did not consume large amounts of Grains. And those that were eaten were specially and traditionally prepared before consumption.
They were always soaked or even fermented (soured) for a long time; bread was baked from fresh flour and not with instant yeast, as it is now, but with slow-acting yeast and so-called sourdough.
What is happening now?
On television, all kinds of quick breakfasts made from oat flakes or muesli are heavily advertised. All instant porridges are a fairly new phenomenon. As are, for that matter, the diseases they cause.
People have stopped treating food as a product for nourishing their bodies. Now for many, the stomach has become a trash can, and they do not think at all about what this leads to. Nowadays we are always busy and we look for ways to do everything more simply and quickly. But at what cost? At the cost of our health and the health of our loved ones.
Modern Grains have changed, and they are no longer at all what our predecessors consumed. They are chemically fertilized, pesticides are used, and they are grown from GMO seeds.
The soil itself is no longer able to provide the vitamins and minerals that were present in Grains even 100 years ago. And in order to get even the vitamins that are still there and to deactivate antinutrients that can interfere with the absorption of minerals and normal digestion, we should always soak grains before cooking.
Why do you need to soak Grains?
Soaking and fermenting Grains enriches them with a greater amount of vitamins, minerals and enzymes, and also destroys Gluten (partially), Phytic acid, Lectins and other anti-nutrients.
As a result of this, Grains are digested and absorbed many times better. Soaked grains are more easily tolerated even by people suffering from food allergies.
Soaking and fermentation naturally replicates the acidic environment of grain sprouting, which not only destroys the protective mechanisms of Grains, but also partially digests the substances in them.
Protective mechanisms of Grains:
- Phytic acid, which is mainly found in the outer shell of grains or in bran. This acid attaches to minerals and prevents them from being absorbed in our gastrointestinal tract, which over time leads to a deficiency of Calcium, Magnesium, Zinc, and Iron. So, if you have been found to have a mineral deficiency, most often you can blame Phytic acid for it. It has already been proven that the cause of osteoporosis and rickets is a lack of Calcium, precisely because of the excessive amount of Phytates in the food consumed. Therefore, I strongly recommend that everyone give up the glorified bran. You will gain nothing from it except a mineral deficiency, and fiber can be obtained from other sources and even in larger quantities, and safely at that.
- Inhibitors of digestive enzymes, which deactivate enzymes in our stomach, which disrupts normal digestion of food and overloads the pancreatic gland.
- Complex sugars, which our body is unable to digest.
- Gluten and complex proteins, which cause numerous diseases throughout the entire body and not only the gastrointestinal tract.
- Lectins.
Animals whose main diet consists of grains, have a digestive tract structure different from ours. They have 4 stomachs and intestines that are much longer than ours.
When we soak Grains, their digestion is also aided by Lactobacilli bacteria, which are found in both the 1st and 2nd stomachs of herbivores.
Which Grains and for how long should they be soaked?
All grains (and not only them) need to be soaked.
The time varies depending on the amount of antinutrients they contain. Below I have listed the minimum soaking time for Grains:
- Oats/oat flakes — 8-12 hours
- Spelt, rye — 8 hours
- Rice, brown — 12 hours
- White rice — 9 hours
- Wild rice — 5 hours
- Pearl barley — 6 hours
- Buckwheat — 5 hours
- Millet — 5 hours
- Quinoa, amaranth — 3 hours
How to properly and easily soak Grains you can read here.
For better absorption and digestion of grains, they must be cooked with healthy fats (butter, coconut oil, ghee). Vegetable (sunflower) oil is not considered a healthy fat.
Simply add a teaspoon of fat of your choice to the water with the Grains and cook as usual. Both the taste is better and it’s healthier.
A diet built on a large amount of pre-unsoaked, unprepared Grains, leads to serious consequences. These include thyroid disease, eczema, allergies, diabetes, autoimmune diseases, Crohn’s disease, colitis, Alzheimer’s disease, etc.
For people suffering from any chronic diseases, it is better to reduce the consumption of Grains to a minimum or eliminate them from their diet altogether. In principle, they do not contain a single beneficial substance that our body is unable to obtain from another source.
All Grains without exception must be soaked. This does not require much effort, and only takes time. But it is better to invest this time now in the prevention of many diseases than later in their treatment.
I hope that now you know which Grains and for how long need to be soaked, and you will follow simple but very important rules for the benefit of your health.
